Tasty and Crunchy Snack!

I just made the best little afternoon snack! I combined 4 ounces 1% cottage cheese with 1/4 cup of Nature’s Path Organic Flax Plus granola with pumpkin seeds! SO good and about 150 calories! I have tried all of Nature’s Path granola (the peanut butter is my favorite!) and really like their product. They are much healthier than the competition granola and it tastes so good sprinkled on yogurt, cottage cheese, fruit….it adds the perfect crunch! I tried to take a picture of my little snack and while I was at it my camera died so I had to plug it in for awhile. My snack perfectly fueled me for the gym, which is where I am heading right now!

Forgot to add that I did have my almond + fiber-one snack this morning at school. It did its job of being tasty, portable and holding me over til lunch!

    Happy Wednesday 🙂 Today’s question is about your delicious soup you keep on eating! How many servings did the recipe yield? And do you leave it in the fridge or freeze it? Thanks!

    I love your daily questions! Makes me feel so helpful! I finished the delicious soup today–it just got better everyday as it sat in the fridge though! That recipe for the lentil soup served 5 and I ate 3 of them and froze 2 of them for later on. I do this easily because I have a food scale and can accurately measure out the soup servings but 1 bowl=1 serving. I would put the equivalent of 2 bowls of soup in 1 tupperware and freeze that, then leave the rest in the fridge!

    Haha, well thank you for your daily answers, I really appreciate it! Hmm, I was thinking of buying a food scale, do you think it’s a good investment? How expensive are they, and where are they available?

    I bought my food scale at william sonoma for 60 dollars. there are cheaper ones but this on is really nice and digital and I LOVE it. its really good for weighing things you can use a measuring cup for, like portioning out dry pasta and cheese. I def. think its a good investment if you are interested in healthy cooking! I used to think it was a big obsessive to want a food scale and to know the exact portions of what I eat, but now i know its not being obsessive, its being nutritionally aware, because we are a nation that loves to overeat! and with over half of americans being considered overweight, us nutritionally-aware people must be doing something right! 🙂
