Need Sleep!

Well, so last night I turned in around 10:15…hoping to get about 7-8 hours sleep. nope! I didn’t fall asleep til FOUR IN THE MORNING! and I had to wake up at 6 for school! So, I’m running on two hours sleep right now 😦 Not healthy and not fun. I think I couldn’t sleep last night because I hadn’t done any exercising yesterday; all I did all day was just sit on an airplane, and my weekend was a little stressful visiting sick grandparents. Hopefully tonight will be better….I’m actually going to lay down for about an hour soon then see how I feel because I really wanted to exercise today. And—I am going grocery shopping!!! My favorite thing to do!! I go to whole foods and the regular grocery store. Whole foods to get all the “special organic” things I love like peanut butter and the regular grocery store to get my produce because its a heck of a lot cheaper!

For breakfast this morning I was exhausted and knew I needed some fuel. I made power oatmeal with 1/2 cup oats, 1 cup water (we are out of skim milk) and 2 ounces 1% cottage cheese. I made the oatmeal last night then this morning heated it up with a banana and the cottage cheese. I also added some peanut butter and walnuts for a little more oomph! It was really good and that, along with a large cup of coffee (I usually always drink tea in the mornings…) helped me get through my crazy morning at school! My breakfast was about 425 calories. I brought along my usual snack of 1/4 cup fiber one and 7 almonds. I think I’m the only one who snacks at culinary school but I have to in order to keep myself going for the 5 hours I’m in the kitchen! Speaking of school……today I made:

Herb Stuffed Pork Chops with Sauce Charcuterie. Tomorrow I’m going to start bringing my camera along to school so I can show you guys what “really” goes on there and take some photos of the stuff I make. I actually did not try the pork chops today…I know, I know, I should since I made them but the thought of nawing on a huuuuge pork chop stuffed with thanksgiving-like stuffing was enough to make me gag this morning. The looked good though and the other 2 guys on my team devoured a couple of them, so I think they were okay 🙂 I wish you guys could have seen me though….I actually was SAWING the pork to carve out the pork chops! It’s really down and dirty there and there’s no room at all to be squeamish…you just have to put on your gloves and dive in. I was quite a site after the sawing adventure, that’s for sure! Its especially interesting for an ex-vegetarian! note: I was a vegetarian up until the time I lived in France last summer. I still only eat meat about once a week–I just prefer plant food I guess 🙂

When I got home around 1, I made the quickest, tastiest and healthiest lunch I know on limited sleep AND limited groceries! I put together a fast peanut butter and jelly sandwich on sprouted grain toast and ate it with 4 ounces cottage cheese and a cut up apple(and a tiny piece of dark chocolate of course for dessert!–all for about 500 calories)

Now I feel a little better but hopefully a quick power nap can restore me even more…..

*gosh, that picture turned out terrible and does not do the chocolate justice! I’m pretty new to this whole thing though and hopefully will have all the photo stuff sorted out soon…

    Hi Jenna,

    I saw your site on the Eat Like Me comments and really enjoy it! I’m 22 also, and think your lifestyle and choices are more similar to my own than Cristin’s. She’s great, but I don’t work from home or shun dessert and wine as much as she. Anyways, just wanted to say hi. Oh, I too go to Whole Foods and the regular grocer. It’s a hassle, but worth the extra trip. Have a good day!

    Thanks, Maggie. I’m glad you like it!! I really want it to be known that I am a normal person who makes normal food choices….I always eat dessert!! 🙂 I’m actually about to go to Whole Foods right now–its the highlight of my week, I could spend hours there! I’m going to be posting my weekly grocery list/recipes so I hope that also helps! Thanks for reading!

    Good for you for making healthy choices on such little sleep! I really admire your resolve to always eat a good balanced breakfast (well, and every other meal really! 😉 It is something I need to work on (eating more at breakfast).

    I also second the comments above about the Eat Like Me blog. Oftentimes, I feel that I can’t relate to it as much because it can be very restrictive on snacks and ‘treats’ (two things I always fit into my caloric intake). I also appreciate how exact you are with measuring and counting- it gives a very realistic picture.

    I hope my eating patterns and foods relate to most women out there….I just don’t believe its practical to not allow yourself any “treats” at all during the day. That is, if you are not on a strict diet, which I’m not on. What kind of life is it where you can’t enjoy things like red wine, dark chocolate, a delicious dessert now and then? I try to eat clean about 90 percent of the time so that I can allow myself the room to indulge! I hope its realistic!

    Oh, and on eating a balanced breakfast….studies have shown that people that eat a good, solid breakfast in the morning actually consume fewer calories all day long than people that don’t eat breakfast at all. If I didn’t eat in the morning, I would pass out! breakfast is my favorite meal of the day!

    Yes, I love that you love dessert. I love the Eat Like Me Blog too, but come on – unless that girl is like 5 feet tall she eats way too little for me.
